Burrito Bowl

**Personal Favourite!

Ingredients:
1lb lean ground turkey
½ tsp Oregano
1 tsp Cumin
Salt and Pepper
2 onions
2 jalapeno
1 orange
5 cloves garlic
2 medium tomatoes
1/3 cup cilantro
1 avocado
1 lime
Olive oil
pinch sugar
1 cup brown rice
1/3 cup cilantro
1 can black beans
Green Onions
Plain Greek Yogurt
Cheddar or Montery Jack Cheese

Directions:
1) Cook rice
2) While rice is cooking saute ground turkey, 1 onion diced, garlic, 1 jalapeno diced (add or remove seeds based on how hot you like it), 1 tsp olive or coconut oil, oregano and cumin, salt and pepper and squeeze the juice from the orange onto the turkey.
3) While turkey is cooking make your pico de gallo
4) Dice 1 onion and put in bowl
5) Slice tomatoes and remove the seeds, then dice what is left and add to onion
6) Dice jalapeno and add to the bowl, add a pinch of sugar and season with salt and pepper
7) Add 1 tsp olive oil
8) Dice avocado and add it to the rest of the mixture
9) Add in the cilantro and squeeze the juice of ½ a lime over it and give a good mix 10) When the rice is cooked add can of black beans to the rice and mix, you can also add cilantro to your rice if you like

Now layer your bowl – 1 yellow of rice and beans, 1 blue container cheese, 1 green of pico de gallo (add half now and save half for the top), 1 red container of meat, now add the rest of your green container, top with a spoonful of greek yoghurt and green onions!
Equals: 1 yellow, 1 blue, 1 green, 1 red and 1 tsp
